Step 1

In a large bowl melt down the butter along with the brown sugar and white sugar.

You'll notice the sugar won't melt, that's fine. Once the butter has melted, QUICKLY mix the sugars with the butter. This will create an emulsion. Check the video for visuals. This step only takes a few seconds but it's important.

Step 2

Add the egg and mix to combine.

Add the flour, baking soda and salt and finish mixing this dough with a spatula.

Lastly mix in the chocolate cut into small pieces.

Your dough will be look loose! This is normal due to the melted butter.

Cover your bowl and place it into the freezer for about 15 minutes.

Step 3

Using a medium size ice cream scoop form your cookies. If you don't have a medium size ice cream scoop just aim for about 10 - 12 cookies.

Roll each cookie into some cinnamon sugar and place the cookies into the freezer for 30 minutes.

These cookies need to go into the oven well-chilled or they'll spread out.

Step 4

After 30 minutes, place the cookies into a well preheated oven at 190 °C (370 °F) with the fan setting on (but away from the heat source ) for about 10 - 12 minutes.

Allow the cookies to sit for 3 minutes or they'll fall apart. Enjoy warm fresh out of the oven! These cookies are best served warm!

Pro Tips

These cookies are best served warm. To reheat them that next day, you can pop them in the microwave for a few seconds before serving (check the cookies after 15 seconds to see if it’s warm; if not, give them a few more seconds). Don't have a microwave? That's OK - bake the ones needed and store the other ones in the freezer for another time! Then when ready, just bake them off!
