Ingredients
For the cookies
70 g (⅓ cup) Really soft butter
100 g (½ cup) Light brown sugar
1 Egg
1 Egg yolk
1 tbsp Lemon juice
150 g (1 cup + 2 tbsp) All purpose flour
½ tsp Baking soda
½ tsp Baking powder
½ tsp Salt
1 tsp Vanilla extract
Method
For the cookies
In a bowl, mix together the creamy butter, brown sugar and vanilla extract.
Add the eggs and lemon juice, and mix.
Add the sifted dry ingredients and the chocolate chips, and stir until just combined. Do not over-mix.
Form the cookies into round shapes, and freeze for 30 minutes.
Bake the cookies on a parchment lined cookie sheet for 13 minutes in a preheated oven at 180 °C (360 °F).
