Ingredients
Use two 7 inch (18 cm) or 8 inch (20 cm) square pans
For the fudge brownies
260 g (2¼ sticks) Butter
350 g (13 oz) Chocolate 70% cocoa
1 or 2 tbsp unsweetened Coffee depending on your preference
4 Large Eggs
150 g (1 cup + 2 tbsp) All purpose flour
30 g (3 tbsp) Unsweetened Cocoa Powder
½ tsp Salt
400 g (2 cups) Sugar
For the brookies / cookie brownies
50 g (3½ tbsp) Butter
60 g (4½ tbsp) Sugar
1 tbsp Milk
½ tsp Vanilla
70 g (8½ tbsp) Flour
¼ tsp Baking powder
¼ tsp Baking soda
Pinch of Salt
Chocolate Chips
For the cream cheese brownies
60 g (2 oz) Philadelphia Cream Cheese
1½ tbsp Sugar
¾ tbsp Egg White
½ tbsp Flour
½ tsp Vanilla
For the peanut butter brownies
60 g (2 oz) Peanut Butter
1 tbsp Sugar
1 tbsp Flour
Salted Peanuts
Caramel (optional after they're done baking)
For the double chocolate brownies
Chocolate chips / chopped chocolate
Method
For the fudge brownies
Melt the chocolate and butter.
Add the sugar, milk and coffee (to your taste), eggs and the sifted dry ingredients. Mix until just combined.
Divide the batter equally between two pans.
Start making the different toppings for the brownies.
For the brookies / cookie brownies
Melt the butter and add the milk, sugar and vanilla. Add the dry ingredients and chocolate chips.
Set aside.
For the cream cheese brownies
Cream the Philadelphia cream cheese and sugar, and add the egg white, vanilla extract and flour.
Set aside.
For the peanut butter brownies
Cream together the peanut butter and sugar, then mix in the flour.
Set aside.
For the double chocolate brownies
Set aside the ingredients.
To assemble
Garnish the top the brownie mix with the different toppings: the cream cheese batter, the chocolate chips batter, the peanut batter and the brookie batter.
Add chocolate chips or chopped chocolate to one side, and salted peanuts on top of peanut batter side.
Bake in a preheated oven at 180 °C (360 °F) for 30 minutes, or until a toothpick comes out almost clean.
Allow to cool completely, then trim the sides of the brownies and cut into squares.
Tips
If your brownie toppings start to brown too much during baking, cover with aluminium foil.
