Mini Birthday Cake Bites Recipe

This mini birthday cake bite recipe is so easy and quick to put together, they make a great lunch box or after school snack. There’s no need to wait for your birthday to enjoy birthday cake!

How to make Mini Birthday Cake Bites

Step 1

In a bowl combine the melted butter, vanilla extract, milk, and egg.

Add the sugar, and whisk to combine well.

In a separate bowl combine the sifted flour, baking powder, baking soda and salt. Make sure everything is well-sifted so that you don’t end up with any lumps of baking soda.

Mix the dry ingredients with the wet ingredients. Mix the batter well, but don't over mix. Gently stir in the sprinkles to distribute them throughout the batter.


Step 2

Pour or pipe the batter into mini liners. If you’re using only liners and no pan, double or triple the liners (depending how sturdy they are) and space them a little apart.


Step 3

Bake the mini cakes in a preheated oven at 180 °C (350 °F) for anywhere between 5 - 10 minutes. After 5 minutes, check them with a tooth pick. If they’re not done, check them every 2 - 3 minutes. These bake quickly, so make sure not to over bake them.

Pro Tips

These cakes are very small and so they bake quickly. Make sure to keep checking them so they don’t over-bake.

Once cool, store the mini cakes at room temperature in an airtight container.

Ingredients

60 g (½ stick) Butter, melted

1 Room temp medium egg

150 g (½ cup + 2 tbsp) Buttermilk OR milk with 1 tsp lemon juice

½ tsp Baking soda

¼ tsp Baking powder

100 g (½ cup) Plain Sugar

180 g (1⅓ cups) All purpose flour

¼ tsp Salt

1 tsp Vanilla extract

Sprinkles - as many as you like!
