STRAWBERRY SHORTCAKE MUG CAKE

INSTRUCTIONS
You will need a small mug about 6oz (170ml) in size.
Melt the butter in your mug.
Add the sugar, vanilla, milk, flour, baking powder and mix until well combined.
Scrape the bottom of the mug, clean the edges and mix in 1 tbsp of strawberries.
Add more strawberries on top and place the mug in the center of your microwave. Cook on high for 1 minute 30 seconds.
Enjoy as is, or top with whipped cream or vanilla ice cream.
CARROT CAKE MUG CAKE

INSTRUCTIONS

Add the sugar, cinnamon, milk, and carrot and mix to combine.
Add the flour, baking powder and mix until well combined.
Scrape the bottom of the mug, clean the edges place the mug in the center of your microwave. Cook on high for 1 minute 30 seconds.

LEMON BLUEBERRY MUG CAKE

Add the sugar, lemon zest, milk and mix until combined.
Add the flour, baking powder and salt and mix until well combined.
Scrape the bottom of the mug, clean the edges and mix in some blueberries.
Add more blueberries on top and place the mug in the center of your microwave. Cook on high for 1 minute 30 seconds.
Enjoy as is, or top with lemon drizzle icing.
For the icing, combine lemon juice with powdered sugar. Start by adding only a ½ tbsp of lemon juice.

2 tbsp Strawberries, cut into small pieces

20 g (1½ tbsp) Butter
15 g (1 tbsp) Sugar

1 - 2 tbsp Grated carrot
35 g (4 tbsp) All purpose flour
½ tsp Baking powder
½ tsp Cinnamon
Pinch of Salt
Lemon Blueberry Mug Cake
20 g (1½ tbsp) Butter
15 g (1 tbsp) Sugar
45 g (3 tbsp) warm Milk
4 - 5 gratings of lemon zest (zest it directly in the mug)
35 g (4 tbsp) All purpose flour
½ tsp Baking powder
2 tbsp of Blueberries
Pinch of Salt
