Baked Oats

Baked oats have gone viral on Tik Tok - people really love them. I wanted to put my own spin on these using the microwave to make them in just a minute or two (usually they take around 20 minutes in a traditional oven). I like to think of them as a cross between oatmeal and cake. They’re delicious, nutritious and and they’re a fun and different way to eat oatmeal. If you love oatmeal, I really recommend you have a go at these!

COOKIE DOUGH BAKED OATS

INSTRUCTIONS

In a microwave safe bowl combine softened peanut butter, maple syrup and milk.

Add the oat flour, baking powder. Combine well, scraping the bottom of the bowl as the peanut butter settles to the bottom of the bowl.

Stir in chocolate chips and microwave for around 1 minute and 30 seconds to 1 minute and 45 seconds.

Every microwave is different so please adjust timing. DO NOT over bake.


BROWNIE BAKED OATS

INSTRUCTIONS

In a microwave safe bowl combine softened peanut butter, maple syrup and milk.

Add the oat flour, baking powder and cocoa powder. Combine well and make sure to dissolve the cocoa lumps. Scrape the bottom of the bowl as the peanut butter settles to the bottom of the bowl.

Stir in chocolate chips and microwave for around 1 minute and 30 seconds to 1 minute and 45 seconds.

Every microwave is different so please adjust timing. DO NOT over bake.


BANANA BREAD BAKED OATS

Add the oat flour, baking powder. Combine well, scraping the bottom of the bowl as the peanut butter settles to the bottom of the bowl.

Stir in nuts or chocolate chips and microwave for around 1 minute and 30 seconds to 1 minute and 45 seconds.

PRO TIPS

For the best texture, it's best to use commercial oat flour.

If you're making the oat flour yourself, process until very fine. Please note though, the texture won't be as fine as the commercial one.

Mix the ingredients in a large bowl, not a mug; or use a really big mug. This is because the peanut butter and maple syrup stick to the bottom so it's easier to combine everything if using a big bowl.

For the best, most precise results, with the ingredients using grams for this recipe because the amounts of ingredients you’re using are so small.

You want the peanut butter in the recipes to be a loose texture, so microwave it separately for ten seconds if it’s not a loose texture out of the jar.

DO NOT pack the oat flour if using measuring spoons.

Cookie Dough Mug Oats

20 g ( 1½ tbsp) Peanut butter

20 g (1 tbsp) Maple syrup

45 g (3 tbsp) Milk

25 g (4 tbsp) Oat flour. Do NOT pack it in the measuring spoon.

½ tsp Baking powder

2 tbsp Chocolate chips

Brownie Mug Oats

20 g ( 1½tbsp) Peanut butter

20 g (1 tbsp) Maple syrup

60 g (4 tbsp) Milk

20 g (3 tbsp) Oat flour
Do NOT pack it in the measuring spoon.

5 g (¾ tbsp) Cocoa powder

2 tbsp Chocolate chips

Banana Bread Mug Oats

20 g (1½ tbsp) Peanut butter

25 - 35 g Banana (around ¼ of a large Banana)

20 g (1 tbsp) Maple syrup

45 g (3 tbsp) Milk

25 g (4 tbsp) Oat flour
Do NOT pack it in the measuring spoon.

½ tsp Baking powder

Crushed nuts or chocolate chips
