Ingredients
For the cookies
100 g (1 stick) Soft vegan butter
120 g (½ cup & 2 tbsp) Brown sugar
2 tbsp Water
1 tsp Vanilla extract
140 g (1 cup & 1 tbsp) All purpose flour
½ tsp Salt
¾ tsp Baking powder
½ tsp Baking soda
Chocolate chips
Method
For the cookies
Cream together the butter, brown sugar, vanilla and water.
Add the flour, salt, baking soda, baking powder and salt, and mix until just combined.
Gently stir in the chocolate chips.
Shape the cookies using a small ice cream scoop, or by hand, and freeze them for at least 30 minutes.
Place the cookies on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180 °C (350 °F) for 13 minutes.
Tips
Store the cookies in an air-tight container.
