Stuffed Red Velvet Cookies

Ingredients

For the cookies

100 g  (1 stick) Soft unsalted butter

65 g (⅓ cup) Brown sugar

65 g (⅓ cup) White sugar

2 Egg yolks

1 tsp Vanilla

140 g (1 cup & 1 tbsp) All purpose flour

1 tbsp Cocoa powder

½ tsp Salt

¾ tsp Baking powder

½ tsp Baking soda

Red food coloring

White chocolate chips

For the filling

100 g (3.5 oz) Philadelphia cream cheese

50 g (5 tbsp) Powdered sugar

1 tsp Vanilla extract

2 tbsp Milk

 

Method

For the filling

Combine the cream cheese, powdered sugar, vanilla and milk.

Form dollops using a spoon, and freeze until solid.

For the cookies

Cream together the butter, brown sugar, white sugar, vanilla and food coloring.

Add egg yolks, and mix.

Add flour, salt,baking soda and baking powder, salt and cocoa powder. Mix until just combined.

Add chocolate chips (optional).

Form the cookies using a small ice cream scoop, or by hand, and place the frozen filling in the center of each cookie.

Freeze the cookies for at least 30 minutes.

Place the cookies onto a baking sheet lined with parchment paper.

Bake in a preheated oven at 180°C (350°F) for 13-15 minutes.

Tips

Store the cookies in an air-tight container.
