INGREDIENTS
For the dough
110 g (1 stick) Soft butter
130 g (4.5 oz) Peanut Butter
170 g (¾ cup + 1 tbsp) White or brown sugar
1 Medium egg
150 g (1 cup) All purpose flour
½ tsp Baking powder
½ tsp Baking soda
½ tsp Vanilla
For the filling
Soft caramel candies
Method
For the dough
In a bowl, mix together the butter, vanilla, sugar and peanut butter.
Add the egg.
Add the dry ingredients, and stir until just combined. Do not over-mix.
Form the cookies using a small ice cream scoop, or by hand, and place a soft caramel in the center of each cookie.
Freeze the cookies for 30 minutes.
Bake the cookies in a preheated oven at 180 °C (350 °F) for 13 minutes. Don’t over-bake.
Allow to cool completely.
