Ingredients
(Makes 12-15 buns)
For the buns
400 g (2¾ cup + 1 tbsp) All purpose flour
100 g (4 oz) Potatoes, boiled and crushed
2 Egg yolks
30 g (2 tbsp) Sugar
120 g (½ cup) Warm milk
100 g (¼ cup + 3 tbsp) Warm water
80 g (⅔ stick) Soft butter
7 g (1 packet) Dried yeast
1 tsp Salt
Method
For the buns
Combine milk, water and yeast together.
Mix flour, sugar and salt together.
Add potatoes, egg yolks and yeast mixture.
Knead the dough on a work surface for 10-15 minutes. If you choose to use a stand mixer knead the dough on high for 3 minutes.
Add the softened butter and continue kneading the dough for another 3 minutes or until the butter is fully combined.
Transfer the dough to a greased bowl, cover and allow the dough to rise for 2 hours.
Shape the buns and place them onto a baking sheet lined with parchment paper.
Bake the buns in a preheated oven at 180°C (350°F) for 20 - 25 minutes.
