Ingredients
For the dough
280 g (2 cups) All purpose flour
30 g (2 tbsp) White sugar
7g Dried yeast
¾ tsp Salt
100 g (½ cup) Warm water
50 g (3 tbsp) Warm milk
20 g (1½ tbsp) Softened butter
For the water bath
1.5L (5 - 6 cups) Hot water
60 g (⅓ cup) Baking soda
Method
Mix the yeast in the warm water, and add the milk and melted butter.
In a large bowl, combine the flour, salt and sugar.
Combine the wet ingredients and dry ingredients.
Knead the dough by hand on a lightly floured surface for around 5 minutes, or until smooth.
Place the dough in a greased bowl, cover with plastic wrap, and let the dough rise for at least two hours, or until it doubles in volume.
Cut the dough into six pieces (for large pretzels) and shape the pretzels (see the video for the precise technique).
Dip each pretzel into the prepared alkaline hot water bath for thirty seconds to a minute; and then place onto a baking sheet lined with parchment paper. Brush the pretzels with beaten egg white.
Bake the pretzels in a preheated oven at 200 °C (400 °F) for 10 minutes.
While still hot, brush each pretzel with melted butter.
