Ingredients
(Makes 9 brownies)
60g (¼ cup) Low fat milk, warmed
80g (3 oz) Greek yogurt
15g (2 tbsp) Coffee
35g (4 tbsp) All purpose flour
50g (¼ cup) Zero calorie Truvia, or the equivalent amount of another zero calorie sweetener.
1 Room temperature egg
35 g (5 tbsp) Unsweetened cocoa powder
¼ tsp Baking soda
¼ tsp Salt
14 g (1 tbsp) Butter
28 g (1 oz) Chopped dark chocolate for the top (optional)
Method
In a bowl combine warm the milk, yogurt, hot coffee and cocoa powder, and mix
to combine.
Add the melted butter, sugar, and egg, and mix to combine.
Add the dry flour, salt and baking soda and mix just until combined. Do
not over mix at this stage.
Transfer the batter to a lightly greased and floured 7 or 8 inch (18 - 20 cm)
baking dish, lined with parchment paper and bake the brownies in a
preheated oven at 180 °C or 350 °F for 12 - 15 minutes.
After 12 minutes check the brownies with a toothpick. Look for wet
crumbs, but no runny batter.
If desired, as soon as the brownie comes out of the oven add chopped
chocolate on top. The heat of the brownie will melt the chocolate.
Tips
Make sure not to over bake the brownies.
One brownie is 50 calories, and with the chocolate on top, it’s 65 calories.
