Ingredients
For the “brownies”
190 g (1¼ cup) All purpose flour
160 g (¾ cup) Sugar
4 Medium eggs
180 g (1½ stick) Soft butter
60 g (6 tbsp) Lemon juice
Zest of 3 - 4 lemons
Pinch of salt
½ tsp Baking powder
¼ tsp Vanilla extract.
For the lemon glaze
100 g Powdered sugar
Zest of 1 lemon
1½ tbsp lemon juice
¼ tsp Vanilla extract
Method
For the “brownies”
In a large bowl, cream together softened butter, vanilla, sugar and lemon zest.
Add the eggs, dry ingredients and lemon juice.
Spread the mixture in a lightly grease and floured pan, lined with parchment paper and bake in a preheated oven to 160 °C (320 °F) for 15 minutes or until a toothpick comes out clean.
Allow to cool completely
For the lemon glaze
In a bowl, mix together powdered sugar, lemon juice, lemon zest and vanilla.
Spread the glaze on top of the brownies and trim sides.
Once cooled, store in an airtight container.
