Step 1

Melt the butter in a large microwave safe bowl.

Add the fine sugar and cocoa powder and mix to combine using an electric mixer.

Mix in the flour and salt. You'll notice the batter will look clumpy.

At this point mix in the 3 eggs uùntil a smooth batter forms.

Step 2

Transfer the cake into an 8 inch (20 cm) baking dish, well-buttered and floured and lined with parchment. If you have a spring form pan use that.

Step 3

Two ways to bake the cake

1. Using your air fryer

Preheat air fryer at 180 °C (350 °F)

Cook the cake for the FIRST 10 minutes at 180 °C (350 °F)

After 10 minutes, lower your air fryer to 150 °C (310 °F) and continue cooking for another 12 minutes.

In total, this cake needs to cook for 22 minutes. The initial 10 minutes at 180 °C (350 °F) allows the cake to form a crispy outside.

2. Using your conventional oven

Preheat oven with the fan on at 200 °C (390 °F)

Cook the cake for the FIRST 5 minutes at 200 °C (390 °F)

After 5 minutes, lower your oven temp to 170 °C (340 °F) and continue cooking for another 18 minutes.

In total this cake needs to cook for 22 - 24 minutes!

When you take your cake out of the oven, allow the cake to cool for 20 minutes in the pan! Do NOT unmold it just yet.

After 20 minutes, release the cake from the sides of the pan and unmold it.

Serve with powdered sugar and vanilla ice cream. The inside will be molten!

Pro Tips

Make sure to really butter and flour the cake pan. The cake is very delicate, and we want to take extra care to make sure it doesn’t stick to the pan. You can also use a springfrom pan or a deep dish and serve it directly in the dish.

Keep an eye on the cake as it bakes. The timing is critical to make sure the inside of the cake is molten and fudgy.
