Blender Birthday Cake

This funfetti birthday cake recipe is the easiest and quickest I’ve come up with, and the results you’ll get are amazing - fluffy, moist and delicious. Unlike most birthday cake recipes, you simply add all your ingredients to a blender, whizz them up for ten to twenty seconds, and that’s the batter made! So you really can get this birthday cake ready for the oven in about a minute - perfect for when you’ve forgotten someone’s birthday! In this recipe, I’ve also given you a recipe for a delicious white chocolate frosting, but you can decorate this cake however you want.

Ingredients

For the cake

80 g (¾ stick) Melted Butter

80 g (⅓ cup + 1 tbsp) Sugar

1 Large egg

125 g (¾ cup) All purpose flour

80 g (⅓ cup) Milk

1½ tsp Baking powder

1 tsp Vanilla extract

Pinch of salt

Sprinkles, if desired

For the frosting

100 g (3.5 oz) White chocolate, chopped

300 g (10.5 oz) COLD heavy cream

1 tsp Vanilla extract

 

Method

For the cake

Add the following ingredients to a blender in this EXACT order:

  • Milk

  • Melted butter

  • 1 egg

  • Vanilla extract

  • Sugar

  • All purpose flour

  • Baking powder

  • Pinch of salt

Blend the batter on medium/high for ONLY 10 - 15 seconds. We just want the batter to combine. Unplug your blender, then scrape the sides and bottom of the blender jug. Plug the blender back in and blend again for another 5 - 10 seconds. DO NOT OVER BLEND.

Give the blender jug one last scrape with your spatula and transfer the batter in a 7 or 8 inch (18 - 20 cm) cake pan, greased and lined with parchment paper. Add the sprinkles to the batter, a gently swirl them through the batter to distribute them.

Bake the cake in a preheated oven at 160 °C or 320 °F for about 22 - 25 minutes. As usual do the toothpick test to make sure it's done. Do not over bake!

Allow the cake to cool for 15 minutes and then cover in glaze. This cake is delicious both warm or room temp.

For the frosting

In a bowl combine white chocolate with one third of the heavy cream. Microwave, stirring every 30 seconds until melted and combined.

Pop this mixture in the freezer for 15 minutes. Don't forget it in the freezer.

After 15 minutes, your mixture should have cooled. Add the remaning COLD heavy cream and whip until light and fluffy. Use immediately.

Tips

If you’re using a high powered blender, blend on medium and make sure to not over mix your blender. As soon as the ingredients combine, stop blending! It should take in total 10 - 15 seconds, tops.

For safety reasons, remember to ALWAYS UNPLUG your blender before touching the inside of the blender.
