Ingredients
340 g (2½ cups) All purpose flour
50 g (½ cup) White sugar
1½ tsp Salt
40 g (⅛ cup) Vegetable oil or melted butter
90 g (⅓ cup) Warm milk
90 g (⅓ cup) Warm water
1 Egg
7 g (1 packet) Dried yeast
Bacon (for topping)
Cheddar cheese cut into little squares (for filling)
Method
In a large glass, stir the yeast into the warm water and warm milk.
Add the oil (or melted butter) and the egg, and stir to combine well.
Add the mixture to the bowl of a stand mixer, and add the flour and sugar.
Process in the stand mixer for around 2 minutes. As the dough is mixing, add the salt.
This dough is supposed to be sticky - don’t add more flour.
Transfer the dough to a greased bowl, cover, and let it rise for 2 hours, or until doubled in size.
Transfer the dough to a floured work surface, and divide into balls that will become the rolls.
Make an indentation in each ball of dough, and place a cube of cheese into it. Then pinch the dough around the cheese, and form the dinner roll.
Transfer the rolls to a buttered baking dish and cover. Leave space between the rolls, and allow to rise for a further 30 minutes.
While the rolls are having their final rise, prepare the bacon topping. Fry the bacon until it’s crispy.
Brush the top of the rolls with egg white, and sprinkle the crispy bacon bits onto the rolls.
Bake the rolls in a a pre-heated over at 200 °C (400 °F) for around 20 minutes.
As soon as they come out of the oven, brush the tops of the rolls with melted butter.
Tips
These rolls are best served warm.
