Ingredients
For the muffins
300 g (2¼ cup) All purpose flour
150 g (¾ cup) Sugar
2½ tsp Baking powder
90 g (¾ stick) Butter
2 Eggs
240 g (1 cup) Buttermilk
200 - 250 g Fresh fruit, chocolate chips, nuts.
Flavorings - vanilla extract, lemon zest, orange zest, cinnamon
Method
For the muffins
In a large bowl combine the flour, sugar, baking powder and salt.
In another bowl combine the melted butter, eggs and buttermilk.
Combine the wet and dry ingredients.
Divide the batter and add different flavorings and/or fillings.
Pour the batter into paper muffin cases, and bake the muffins in a preheated oven at 200 °C (400 °F) for 10 minutes. After 10 minutes, lower the temperature to 180 °C (350 °F) and continue baking for another 10 minutes.
Tips
Store the muffins in an air tight container.
You can substitute the buttermilk for milk and 1 tsp of lemon juice / vinegar.
Please Note: the baking time in the video is different because my muffin liners were a bit bigger than standard muffin liners.
