Ingredients
Makes 6 small donuts
1 Egg
15 g (1 tbsp) Sugar
1 tsp Vanilla
½ tsp Cinnamon
6 gratings of Nutmeg
30 g (2 tbsp) Greek yogurt
30 g (3 tbsp) All purpose flour
¼ tsp Baking powder
Cinnamon sugar to toss them in once baked.
DO NOT omit the cinnamon and nutmeg. That's what makes these baked donuts taste like donuts!
Skinny Chocolate Glaze
100 g (3.5 oz) Dark Chocolate
50 g (3 tbsp) Milk
You will have some glaze leftover
Method
In a bowl combine the egg, sugar, vanilla, cinnamon and nutmeg and whip until the mixture triples in volume, lightens in color and forms ribbons. When you have enough air incorporated, the mixture will be very pale in color - like a pale mayonnaise. Should take between 3 and 5 minutes.
This whipping stage is very important. How well you whip the egg mixture will determine how well your donuts rise, and thus the final outcome of the donuts. Please check the video for a visual guide.
Quickly mix in the yogurt.
Add the sifted flour and baking powder and gently combine both mixtures together without deflating the egg mixture. Do not deflate this mixture or your donuts will flatten. As soon as the flour has been incorporated, stop mixing.
Transfer batter into a 10 x 7 inch greased donut pan. Bake donuts in a preheated oven at 160 °C or 320 °F for about 8 minutes.
Don't overbake!
For the cinnamon sugar coating
As soon as these come out of the oven toss the donuts in cinnamon sugar and enjoy - Cinnamon sugar is my favorite way to enjoy these donuts!
For the skinny chocolate glaze
Chop up the chocolate into small pieces and add it to a microwave safe bowl along with the milk.
Microwave the glaze until fully melted stirring every 30 seconds!
Coat each donut in the glaze
Tips
Remember, these are “cake donuts”. They have the same flavour as fried donuts, but the texture is a little different. It’s just not possible to make 50 calorie fried donuts!
